The next generation of retail is here: Part 4

Exploring innovation for hyper efficiency.

In April’s ‘Big Picture’ column, I described the three key innovations and themes that are reshaping the retail landscape in 2024. May and June's columns delved deeper into two of these themes: Innovation for a better world and innovation for an enhanced experience. This month, we conclude this four-part series with a look at the final transformative theme: Innovation for hyper efficiency.

Specifically tailored to convenient concepts, efficiency leaders unlock an easy and convenient omnichannel experience through advanced business processes and capabilities. With the rapid adoption of artificial intelligence (AI), robotics, and machine learning, retailers are evolving their services and solutions to incorporate game-changing technologies. Many cases in this category leverage technology-based solutions for back-end operations, such as removing friction and streamlining operations to serve associates and customers alike. Here are some notable examples.

Sweetgreen

Sweetgreen launched its inaugural fully automated restaurant, the Infinite Kitchen, in May 2023, incorporating robotics technology acquired from Spyce. Located in Naperville, Illinois, this concept allows customers to order via kiosks or online. A conveyor belt system with robotic controls dispenses salad ingredients into personalized bowls, which are then finished by a Sweetgreen employee.

The Infinite Kitchen drastically reduces labour costs, needing half the staff of a typical location, while producing up to 600 salads per hour. This innovation optimizes efficiency, streamlines labour, and ensures precision in order fulfillment. Sweetgreen plans to expand this automated format to new and existing locations, reshaping the brand's dining experience.
